White eggplants tend to be milder and sweeter than the traditional dark purple eggplants—and Casper is the very best white eggplant we’ve tried. The 5-7 in. long, shiny ivory fruits have silky, tender, snow-white flesh and a sweet, mild flavor. It can even be eaten raw! If picked at the smaller stages, no peeling is required.
